Breaded chicken with mushroom sauce and brussels sprouts

Chicken Breast
- Used thinly sliced chicken breast
- Seasoned with salt and pepper and then breaded
- Cooked in nice olive oil
- Medium heat, ~4 mins on each side
- Halved the recipe, used 3 mushrooms
- Used heavy cream instead of skim milk, maybe 1/3 cup. Good, but maybe mix it with some milk if I want it to be more of a sauce.
- 1 clove = 1 tsp chopped garlic
- no parsley, no problem
Brussels Sprouts
Wash: In a large bowl full of lightly salted water, soak the sprouts for 10 minutes to clean them, then rinse under running water.
Trim: Cut off the brown ends of the Brussels sprouts and pull off any yellow outer leaves.
* I left them whole after trimming, but might have been better if I chopped them a bit.
Flavor with balsamic vinegar (1/4 cup), red wine (1/4 cup), salt, & pepper
* could have used a simpler recipe of just olive oil, salt, pepper
* could add cheese and garlic to help with the bitterness
Bake @ 400 for 40 minutes
