Muddy Buddies

Followed this recipe. I could try making it Christmas-y sometime by adding mini mnm’s and pretzels.

Ingredients
1 box Chex cereal (~8 cups; I used the chocolate and vanilla mix)
2 cups powdered sugar (I needed a little more but only because I’m bad at the mixing step)
1.5 cups semisweet chocolate chips
3/4 cup creamy peanut butter
4 Tablespoons salted butter, or add a pinch salt if using unsalted butter
1 teaspoon vanilla extract

Instructions

  1. Measure cereal into a large bowl. I used my wok and that worked well.
  2. Add chocolate chips, butter, and peanut butter (and salt, if using unsalted butter) in a medium-large bowl and melt together in the microwave. Keep checking on it and mixing, don’t want it to get too hot, just all melted together.
  3. Remove from heat and stir in the vanilla extract.
  4. Pour over the cereal and stir to coat evenly.
  5. Pour some of the powdered sugar in a large container with a lid. Coat the inside of the container.
  6. Add a layer of the coated chex, add some more powdered sugar on top, close the lid and shake to coat. Keep doing this in layers. You might have to remove some of the finished chex to another container as you coat the rest. Can also do this with 2 gallon-sized ziplock bags.
  7. Muddy buddies will stay fresh for up to 1 week stored in an air-tight container at room temperature or can be frozen for up to 2 months.
