Guinness Cheese Dip

Ingredients
8 oz cream cheese, room temp
2 1/2 cup (~.5 lb) sharp irish cheddar cheese, grated
1 tsp dijon mustard
2 Tbsp half and half
1 pinch salt
1/4 cup Guinness
2 scallions, chopped
1 tsp Tobasco (recipe recommended only a dash but I tested and preferred this)
Instructions
- Using a food processor or blender on the low setting, combine everything except the Guinness, scallions, and salt
- Add Guinness, blend until smooth
- Add Tobasco, blend to combine
- Add scallions, pulse briefly
- Chill for at least an hour. When you’re ready to eat, bring it to room temperature, it might need a quick stir.
- Garnish with some extra scallions
