Guinness Cheese Dip

Ingredients
8 oz cream cheese, room temp
2 1/2 cup (~.5 lb) sharp irish cheddar cheese, grated
1 tsp dijon mustard
2 Tbsp half and half
1 pinch salt
1/4 cup Guinness
2 scallions, chopped
1 tsp Tobasco (recipe recommended only a dash but I tested and preferred this)

Instructions

  1. Using a food processor or blender on the low setting, combine everything except the Guinness, scallions, and salt
  2. Add Guinness, blend until smooth
  3. Add Tobasco, blend to combine
  4. Add scallions, pulse briefly
  5. Chill for at least an hour. When you’re ready to eat, bring it to room temperature, it might need a quick stir.
  6. Garnish with some extra scallions
