Ground Beef Quesadillas

I halved this recipe. Makes 3-4 medium sized quesadillas (probably 3 for the large tortillas I normally get).
Ingredients:
- 1/2 pound ground beef (I used 80% lean because that’s what I have on-hand for burgers)
- A smidge of olive oil (not sure this is even needed because of the fatty ground beef)
- 1/2 teaspoon red chili powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon onion powder (optional)
- 1 chili (Thai green or Tabasco), sliced (if you don’t have, could try replacing with 1/2 tsp chipotle chili pepper + dash of ground cayenne)
- 1 tablespoon of beef stock/broth (optional)
Instructions:
- Heat olive oil over medium heat (probably not strictly necessary for fatty beef)
- Add beef + all seasonings and chilis (I pre-mixed the seasoning in a bowl, made it easier)
- Cook, breaking the ground beef into small pieces and stirring occasionally, until the ground beef is fully cooked through (the ground beef should no longer be pink and be browned all the way through), about 8 to 10 minutes.
- Stir in broth/stock if using and cook for 1-2 minutes more (if not using, you’re done)
