Creamy Cajun Chicken
Posted

Taken from this Instagram post. I had to guestimate all the amounts since it was just a video.
Ingredients
2 pieces of thinly sliced chicken
Cornstarch
2 medium shallots, thinly sliced (about 1/2 cup)
1.5-2 tsp cajun seasoning
1 tsp paprika
A little less than a tsp Italian seasoning
Red pepper flakes - eyeball it, organic is much spicier
1 small-ish yellow onion
1-1.5 tsp minced garlic
A little more than 1/3 cup broth
3/4 of a 1/2 cup of heavy cream
Shredded parmesan - a big fistful. Maybe 2/3 cup?
Lemon juice
Instructions
- Chop onions. Prep plate for breading.
- Season the chicken with salt and pepper. Coat it in corn starch and pan fry in oil until it’s golden-brown.
- Meanwhile, mix spices (cajun, paprika, Italian, chili flakes) in a bowl. Prep broth.
- Melt a pad of butter in the same pan and add onions and garlic. Cook until translucent.
- Add spices mix. Stir fry until fragrant.
- Add broth & heavy cream. Stir until it thickens.
- Add Parmesan and a squeeze of lemon. Mix.
- Add back the chicken and baste it with the sauce.
