Creamy Cajun Chicken

Taken from this Instagram post. I had to guestimate all the amounts since it was just a video.

Ingredients
2 pieces of thinly sliced chicken
Cornstarch
2 medium shallots, thinly sliced (about 1/2 cup)
1.5-2 tsp cajun seasoning
1 tsp paprika
A little less than a tsp Italian seasoning
Red pepper flakes - eyeball it, organic is much spicier
1 small-ish yellow onion
1-1.5 tsp minced garlic
A little more than 1/3 cup broth
3/4 of a 1/2 cup of heavy cream
Shredded parmesan - a big fistful. Maybe 2/3 cup?
Lemon juice

Instructions

  1. Chop onions. Prep plate for breading.
  2. Season the chicken with salt and pepper. Coat it in corn starch and pan fry in oil until it’s golden-brown.
  3. Meanwhile, mix spices (cajun, paprika, Italian, chili flakes) in a bowl. Prep broth.
  4. Melt a pad of butter in the same pan and add onions and garlic. Cook until translucent.
  5. Add spices mix. Stir fry until fragrant.
  6. Add broth & heavy cream. Stir until it thickens.
  7. Add Parmesan and a squeeze of lemon. Mix.
  8. Add back the chicken and baste it with the sauce.
