Chocolate Mini-Muffins

Inspired by this recipe. It was a challenge converting this from British to American in a time crunch. Below recipe makes 17-18 mini muffins.
Ingredients
- 1 cup self-rising flour
- 1/4 tsp salt
- 1 tsp baking powder
- 6 tsp cocoa powder (or 5 “rounded” teaspoons)
- 1/3 cup granulated sugar (it would have probably been better if ~1/3 of this was soft light brown sugar, but I was out of that)
- 1 large egg, lightly beaten
- 6 tbsp whole milk (I mixed 2 heavy cream, 3 skim)
- 3+ tbsp vegetable oil
- 1/2 tsp vanilla extract
- 1/2 cup chocolate chips
Directions
- Heat oven to 350°F
- Spray mini-muffin tin with cooking spray
- Beat the eggs and milk in a medium bowl
- In a large bowl, mix the flour, salt, baking powder, cocoa and sugars. Make a well in the centre and tip the milk mixture into the well along with the oil and vanilla.
- Whisk everything until you have a well-combined, smooth batter.
- Fold through most of the chocolate chunks. * Spoon the mixture between the cupcake cases and top each one with some of the remaining chocolate chunks.
- Bake in center rack for 11 minutes (for full sized muffins, just convert this to ~20 mins). Toothpick should come out dry.
