Cheeseburger Crescent Rolls

Inspired by this recipe. I cut it in half.

Ingredients
3/8 cup ketchup
3/8 cup mayonnaise
20 dill pickle chips, finely chopped
1/6 cup yellow mustard
One shallot or a 1/4 small red onion, finely chopped
1/2 pound ground beef
One 8-ounce tube refrigerated crescent roll dough
2-3 slices American cheese, cut in half
1 tablespoon unsalted butter, melted
1/2 teaspoon toasted sesame seeds

Instructions

  1. Cook onions in a tablespoon of oil over medium-high heat, stirring occasionally, until softened, 2 to 3 minutes.
  2. Add in the ground beef, 1/4 teaspoon salt and a few grinds of pepper and cook, breaking the meat up with a wooden spoon and scraping up any brown bits in the pan, until golden brown in spots and cooked through, 5 to 6 minutes.
  3. Transfer beef to a medium bowl and let cool slightly, about 15 minutes. Stir in 3/8 cup of the ketchup sauce.
  4. While it’s cooling, make the sauce by mixing the ketchip, mayo, mustard, and chopped pickles. Could probably get away with less of everything: 1/4 cup of ketchup & mayo, <2 tbsp mustard, 14 pickles.
  5. Coat a sheet of foil in cooking spray. Unroll a can of crescent dough and separate into 8 triangles. Arrange the triangles in a ring so the short sides of the dough are overlapping slightly and the pointed ends are facing outward (it should look like a giant sun). Original recipe said to do this around a ramekin but I needed more space.
  6. Spoon the beef mixture over the short ends of the triangles closest to the ramekin. Cover the beef with the cheese slices. Take hold of the pointed end of one of the triangles and fold it up and over the filling, tucking the tip under the bottom edge of dough to secure (the dough will not cover the filling completely). Repeat with the remaining triangles (there will be some gaps where you can see the beef mixture).
  7. Bake at 375 degrees F until the dough is golden brown and the cheese is melted. It was definitely browned by 15 minutes, but keep an eye on it earlier than that too.
  8. [Optional] Brush the ring with butter and sprinkle on the sesame seeds.
  9. Let cool for 15 minutes. Use a spatula to slide the ring off the baking sheet onto a platter. Serve with the remaining ketchup sauce.
