Caramelized Onion & Chili Oil Pasta

Taken from this and another recipe on Instagram.
Ingredients
10 oz pasta - I used fettucine
2 large onions
2 tablespoons chili oil
2 tablespoons butter
2 tablespoons olive oil
4 cloves garlic minced
500 ml (or 1.5 cups, I don’t remember) heavy cream
Parmesan or some other shredded cheese
Instructions
- Slice onions. Make pasta.
- Add olive oil and butter to a pan . Add onions and caramelize. Cooking on low heat while stirring for at least 20 minutes (I think I did ~25). Do not rush the process. Low heat. If they are burning at a bit of water and continue to stir. (Once the onions have started to get color & caramelize turn it on low & stir often)
- Add the 2 tblsp chili oil & mix well. Add heavy cream, garlic, and salt & pepper to taste. Let this simmer together for about 5 minutes before adding in the pasta.
- Add the pasta. Let the pasta & sauce simmer together for a couple more minutes so they can combine well.
- (Optional) Melt in some (1/4 cup?) Parmesan or some other kind of cheese. I didn’t do this last time but I garnished with a bunch of gouda and it made a big difference so might want to try it.
