Biscuits, Pimento Cheese Dip, and Honey Butter

Recipe
- Too flour-y? I had to add more milk after the milk step, and when I mixed I had to push the ingredients up against each other to make it more like a dough.
- When folding, I might have pushed the folds against each other too hard, biscuits didn’t have many layers. Maybe could find a recipe where butter gets put directly between folds? I think I saw that on the Great British Baking Show.
Pimento Cheese Dip
Mainly used this recipe.
- Ingredients (I actually made the full recipe):
- 2 cups grater extra-sharp Cheddar cheese
- 8 ounces cream cheese, cut into 1” cubes and softened at room temperature
- 4 ounces pimento peppers, well drained and chopped if in strips
- 2 tablespoons mayonnaise
- ¼ teaspoon garlic powder, onion powder, cayenne pepper
- ½ medium jalapeño pepper, minced. I used red because all they had, it seemed fine. Recipe says ribs and seeds should be removed. I kept a little in and it needed it. This similar recipe actually even says 1 jalapeño
- Salt & pepper, to taste
- In a large mixing bowl, combine all ingredients and beat with a wooden spoon until the mixture is thoroughly combined.
Honey Butter
Inspiration
- Pull out 1 stick (1/2 cup) of butter to warm to room temp on counter. This really helps.
- Beat full stick of butter with wooden spoon until smooth & creamy
- Add 1/6 cup of nice honey and ~1/4 cup coarse Kosher salt, beat again
- Recipe suggested adding confectioners’ sugar too (1.5 tbsp). I didn’t, not sure if it needed it, but might try a little next time.
