Biang Biang Noodles

I got this recipe on Instagram and learned that it’s super annoying to follow recipes from Instagram.

Ingredients
1 bunch spring onions
6 cloves garlic
1 handful coriander (my hands)
1 inch ginger
1 tbsp chilli flakes
1 tbsp peanut butter
1 tbsp sesame seeds
1 pinch sugar
3 tbsp soy sauce
2 tbsp apple cider vinegar (I decreased this from 3 on Jack’s request. Test to see if this works)
Noodles (I used fettucine, but the video used mafaldine and that looked good. Tagliatelle would work well.)

Instructions

  1. Chop up 6 cloves of garlic into tiny bits then chop up the bunch of spring onions and a handful of coriander.
  2. Cook pasta according to package. Make sure you get this going before you start frying.
  3. While that cooks, fry everything in a good splash of oil. Starting with your spring onion then the garlic. Grate in a little nob of ginger and then 1 tablespoon of chilli flakes.
  4. Stir fry for a minute or so before adding 3 tablespoons of soy sauce, followed by 2 tablespoons of apple cider vinegar.
  5. Add a big dollop of peanut butter and stir it in until it’s all combined.
  6. Add sesame seeds and then coriander and stir. Then add a big pinch of sugar.
  7. Turn that into a smooth sauce with a couple of ladles of the noodle water so it emulsifies.
  8. Toss noodles in sauce and serve.
