Banana Chocolate Chip Cookies

These were really tasty. I doubled the recipe below because my mashed banana came out to be 1/2 a cup, so make sure you check.

Ingredients
1 small overripe banana, mashed (about 1/4 of a cup)
1/2 cup vegetable oil (canola oil is a type of vegetable oil)
1 cup brown sugar, packed (~200 grams)
1 egg yolk
1 teaspoon vanilla extract
1 1/3 cups all purpose flour (~160 grams)
1/2 teaspoon baking soda
2 teaspoons ground cinnamon (I would lower this a bit next time, maybe 1.5)
1/2 teaspoon salt
2/3 cup chocolate chips

Instructions

  1. In a large bowl, combine the oil, brown sugar, and mashed banana. Mix to combine.
  2. Add the egg yolk and vanilla extract. Mix well.
  3. Add the flour, salt, baking soda, and cinnamon. Stir until combined and no streaks of flour remain.
  4. Last, fold in the chocolate chips.
  5. I put these in the fridge for at least an our to firm up before scooping, but could try without (cookies will probably spread more)
  6. Use a tablespoon measure to scoop out and place on a baking sheet (I could fit ~8 on one sheet).
  7. Bake at 350 F for 9 mins.
  8. I froze the extra dough balls and that worked well. I take them out just a little before baking, while the oven is preheating, and that’s enough to defrost them.
