Banana Chocolate Chip Cookies

These were really tasty. I doubled the recipe below because my mashed banana came out to be 1/2 a cup, so make sure you check.
Ingredients
1 small overripe banana, mashed (about 1/4 of a cup)
1/2 cup vegetable oil (canola oil is a type of vegetable oil)
1 cup brown sugar, packed (~200 grams)
1 egg yolk
1 teaspoon vanilla extract
1 1/3 cups all purpose flour (~160 grams)
1/2 teaspoon baking soda
2 teaspoons ground cinnamon (I would lower this a bit next time, maybe 1.5)
1/2 teaspoon salt
2/3 cup chocolate chips
Instructions
- In a large bowl, combine the oil, brown sugar, and mashed banana. Mix to combine.
- Add the egg yolk and vanilla extract. Mix well.
- Add the flour, salt, baking soda, and cinnamon. Stir until combined and no streaks of flour remain.
- Last, fold in the chocolate chips.
- I put these in the fridge for at least an our to firm up before scooping, but could try without (cookies will probably spread more)
- Use a tablespoon measure to scoop out and place on a baking sheet (I could fit ~8 on one sheet).
- Bake at 350 F for 9 mins.
- I froze the extra dough balls and that worked well. I take them out just a little before baking, while the oven is preheating, and that’s enough to defrost them.
